The House Blend
Single origin gets the poetry. The blend gets you through Tuesday. He takes the blend more seriously than anything in the shop, because it is the cup most of the block actually drinks.
The recipe is short: Huila underneath for the panela sweetness and the body, Guji on top for the lift. Roughly two to one, adjusted by taste every single week, because crops move and the blend is a promise, not a recipe card.
A house blend has one job — be the same good cup every day of the year. That is harder than it sounds. Farms have seasons. Bags land different. So he cups the components every Monday and bends the ratio until Tuesday tastes like last Tuesday. The dial on the grinder moves; the cup does not.
It is the cheapest bag on the shelf and the hardest one to make. He is prouder of that than he lets on.

Dialed in,
